Eggplant Casserole
Eggplant Casserole is an impressive dinner. Made with 1 large eggplant, 1 green pepper, 1 onion, chopped, 3 stalks celery, chopped and 3 tbsp. butter, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Boil eggplant in salted water; drain and mash.
Saute green pepper, onion and celery in butter.
Add eggplant and cook five minutes.
Grate hard-cooked egg and chop livers; add to mixture. Stir in raw egg, bread crumbs, cayenne and salt and pepper to taste.
Cook a few minutes.
Sprinkle top with cracker crumbs and dot with butter.
Bake 40 to 45 minutes at 375Β°.
Serves 4.
