Eggplant Casserole
Eggplant Casserole is an moderately easy dinner. Made with 2 large eggplants, about 3 lbs., 3 c. spaghetti sauce, ragu garlic and mushrooms, salt and pepper to taste, 1 medium onion, chopped and 1/2 tsp. cayenne pepper, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Peel eggplants, cube and boil until tender.
Drain and mash. Saute ground meat with onion until no longer pink.
In large bowl, mix all of the ingredients, except 1/2 c. cheese for topping. Pour mixture in 9-inch x 13-inch pan sprayed with Pam.
Top with remaining cheese. Bake at 350Β° about 25 minutes until set.
