Eggplant Casserole
Eggplant Casserole is an moderately easy dinner. Made with 2 c. eggplant, cooked and drained, 1 medium chopped onion, 1 or 2 cans whole tomatoes, drained, 4 eggs and 1 c. bread crumbs, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Saute onion in bacon grease or butter and add tomatoes and eggplant (mashed slightly with potato masher).
Add eggs; stir in cheese.
Add bread crumbs.
Top with remaining crumbs.
