Easy Salmagundi
Easy Salmagundi is an moderately easy dinner. Made with 3/4 lb. ground round, 1 c. chopped onion, 1/2 c. chopped green pepper, 2 (8 oz.) tomato sauce and 2 c. water, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Lightly brown meat in Dutch oven.
Add onion and pepper; cook until tender.
Add tomato sauce and water; bring to a boil.
Stir in brown rice, chili powder, salt and pepper.
Reduce heat, cover and simmer 50 minutes.
Stir in corn and additional water, if needed.
Cover and cook 10 minutes.
Makes 6 (1 cup) servings. Contains 4 grams fat per serving.
