Dodo's Eggplant Casserole
Dodo'S Eggplant Casserole is an moderately easy dinner. Made with 1/2 c. chopped onion, 2 garlic cloves, minced, 1 medium eggplant, peeled and cut into 1-inch cubes, 2 c. water or broth and 1 whole egg and 1 egg white, this recipe delivers authentic, satisfying flavors. Spray heavy saucepan with Pam.
Lightly brown onion and garlic.
Add eggplant and water or broth; cook covered until tender, stirring occasionally.
Pour mixture into greased casserole.
Beat eggs until frothy.
Pour over cooked eggplant. Sprinkle with seasoning and cheese.
Bake in 350Β° oven for 25 to 30 minutes until cheese is melted.
