Dodo's Eggplant Casserole
Dodo'S Eggplant Casserole is an moderately easy dinner. Made with 1/2 c. chopped onion, 2 garlic cloves, minced, 1 medium eggplant, peeled and cut into 1-inch cubes, 2 c. water or broth and 1 whole egg and 1 egg white, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Spray heavy saucepan with Pam.
Lightly brown onion and garlic.
Add eggplant and water or broth; cook covered until tender, stirring occasionally.
Pour mixture into greased casserole.
Beat eggs until frothy.
Pour over cooked eggplant. Sprinkle with seasoning and cheese.
Bake in 350Β° oven for 25 to 30 minutes until cheese is melted.
Serves 4.
