Date Refrigerator Pinwheels
Date Refrigerator Pinwheels is an moderately easy dinner. Made with 2 1/4 c. chopped dates, 1 c. sugar, 1 c. water, 1 c. chopped nuts and 1 c. shortening, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Combine dates, sugar and water in a saucepan.
Cook over low heat until thick (10).
Add nuts and cool.
Work shortening with a spoon until fluffy and creamy; add brown sugar gradually while continuing to work.
Add the well beaten eggs and mix well.
Add remaining ingredients, sifted together, and mix well.
Cover and chill.
Divide the mixture in 2 parts and roll each out separately into a rectangle a little less than 1/4-inch thick.
Spread each with some of the date filling and roll up as for jelly roll into 2 long rolls.
Wrap in wax paper and chill overnight if possible. Cut with a sharp knife into slices about 1/4-inch thick.
Arrange on greased cookie sheet.
Bake in a 400Β° oven for 10 to 12 minutes. Makes 5 dozen.
