Crispy Oven-Fried Mexican Chicken is an moderately easy dinner. In large shallow pan (not aluminum), combine V-8 juice and hot sauce.
Add chicken and marinate for 30 minutes.
Drain chicken. Preheat oven to 375Β°.
Spray a baking sheet with nonstick spray. In a large plastic bag, combine remaining ingredients.
Place chicken parts, a few at a time, in bag and shake to coat chicken. Transfer coated chicken pieces to baking sheet.
Sprinkle remaining crumbs over chicken.
Bake until chicken is tender and crisp, about 1 hour.
