Creole Scalloped Tomatoes
Creole Scalloped Tomatoes is an moderately easy dinner. Made with 6 large tomatoes, skinned and quartered, 3 tbsp. margarine, 1 large chopped onion, 1 large green pepper, sliced thin and 1/4 lb. fresh mushrooms, sliced, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Heat the margarine in a skillet and lightly saute peppers, onions and mushrooms.
Grease a 2-quart casserole.
Put a layer of half the bread cubes in the bottom, then a layer of tomatoes and a layer of sauteed mixture.
Sprinkle tomatoes with sugar, salt, paprika and dot with margarine.
Repeat layer.
Top with bread cubes and sprinkle with cheese.
Bake in a 400Β° oven for 30 minutes or until well browned.
Serves 6 to 8.
