Creole Baked Catfish
Creole Baked Catfish is an moderately easy dinner. Made with 1 c. chopped onion, 1/2 c. chopped green pepper, 1 clove garlic, minced, 1/4 c. oil and 1 (14 oz.) can whole tomatoes, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Saute onion, green pepper and garlic in oil until tender.
Add tomatoes and tomato sauce and simmer 10 minutes.
Place catfish (salted and peppered) in oiled 3-quart casserole.
Pour sauce over all.
