Cream of Ramp Soup
Cream Of Ramp Soup is an moderately easy dinner. Made with 4 tbsp. butter, 2 bunches ramps, trimmed and chopped, 3 tbsp. flour, 1 tsp. salt and 1 tsp. pepper, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Melt butter in a deep pan.
Add ramps; saute for 3 to 4 minutes.
Stir in flour, salt, pepper and garlic, stirring 1 to 2 minutes.
Gradually stir in chicken stock.
Bring to boil; reduce heat, cover and simmer for 8 to 10 minutes.
Stir in milk and cream; heat but do not boil.
Serve with croutons and grated Monterey Jack cheese.
