Cream of Potato Soup

Pare and dice potatoes.
Cover well with water and boil until soft.
Do not drain.
Add salt and celery.
Put a heaping tablespoon of butter in skillet and brown flour.
To this gradually add milk.
When milk begins to thicken, add it to the cooked potatoes and water.
Simmer and stir until mixed.
May add parsley.
