Cream of Leek Soup
Cream Of Leek Soup is an moderately easy dinner. Made with 3 leeks (white part only), shredded, 1/2 large onion, chopped, 1 stick margarine, melted, 2 c. chicken broth and 2 large potatoes, shredded, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Saute leeks and onion in 2-quart pot in margarine for 10 minutes.
Add 2 cups broth and shredded potatoes.
Cook for 30 minutes.
Remove 1/2 and purΓ©e.
Return to other 1/2 and add cream and chicken stock (more if too thick).
Serve and sprinkle with parsley and bacon bits.
