Cream of Broccoli Soup
Cream Of Broccoli Soup is an moderately easy dinner. Made with 4 c. chicken broth, 1 can (10 3/4 oz.) cream of celery soup, fresh broccoli, cut & steamed until tender, 1/2 c. butter or margarine and 1 medium onion, chopped, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Mix broth and soup in large pan and bring to a boil. Add steamed broccoli and reduce heat. Simmer, covered for about 5 minutes.
Heat butter in pan and add chopped onion, saute until tender.
Add flour to butter & onions.
Cook for 1-2 minutes. Gradually stir in milk with onion and flour mixture.
Cook until thickened, about 5-10 minutes. Add salt and pepper, mix well. Stir milk mixture into broccoli mixture.
Add the 2 cheeses and simmer for about 15 minutes. Serves 4-6 people.
