Sauté bell pepper, onion and celery in butter until tender.

Add crawfish tails, green onions, parsley and seasonings.

Thicken with cornstarch if needed.

Place half of pie crust in pan and fill with cooled mixture.

Place top crust on pie.

Cut two 1-inch long slits in top crust.

Bake at 450° for 10 minutes.

Then lower temperature to 375° and bake for 35 minutes or until crust is golden brown.
