Crawfish or Shrimp Etouffee
Crawfish Or Shrimp Etouffee is an impressive dinner. Made with 1/4 c. butter or oleo, 1 c. small chopped onion, 1/3 c. celery, chopped, 1/3 c. green pepper, chopped and dash of each: red and black pepper, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Melt butter in a large heavy pot (iron preferred).
Saute onions, garlic, green pepper and celery until onions are clear. Stir in all ingredients except crawfish (or shrimp).
Simmer 30 minutes on low heat.
Stir occasionally.
Add crawfish (or shrimp) tails; simmer 25 minutes over medium heat.
Serve over cooked rice.
