Cranberry Pepper Roast
Cranberry Pepper Roast is an easy dinner. Made with 4 lb. beef tip roast, 2 tbsp. cracked pepper, 3 tbsp. salad oil, 2 2/3 c. cranberry cocktail/juice and 1 c. fresh cranberries, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Score meat in a crisscross pattern.
Rub sides only with pepper.
Place in Dutch oven or roasting pan and brown over medium heat on all sides about 15 minutes.
Pour cranberry juice over meat; add cranberries.
Cover and cook in 325Β° oven for 2 hours until tender.
Place meat on warm platter; add a small amount of cornstarch to juice and cook until thickened.
