Cranberry-Mandarin Glazed Pork Roast
Cranberry-Mandarin Glazed Pork Roast is an moderately easy dinner. In a small saucepan stir together all ingredients except pork. Cook stirring over medium heat until the sauce is thickened, set aside.
Place roast in a shallow baking dish, brush with thickened sauce.
Roast at 325° for 30 minutes.
Spoon 1/2 cup of the prepared glaze over the roast, continue roasting for 30 to 45 minutes more until internal temperature of roast is 155° to 160°. Let the roast stand 10 to 15 minutes before slicing.
Slice and serve with the remaining sauce.
Serves 10 to 12.
