Crabmeat Au Gratin
Crabmeat Au Gratin is an moderately easy dinner. Made with 1 c. onion, chopped fine, 1 stalk celery, chopped fine, 1/4 lb. oleo or butter, 1/2 c. all-purpose flour and 1 can evaporated milk, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Saute onion and celery in oleo or butter until onion is wilted. Blend flour in well with this mixture.
Pour in milk gradually, stirring constantly.
Add egg yolks, salt and red and black peppers; cook for 5 minutes.
Put crabmeat in a bowl suitable for mixing and pour the cooked sauce over the crabmeat.
Blend well and then transfer to a lightly greased casserole; sprinkle with grated Cheddar cheese.
Bake at 375Β° for 10 to 15 minutes or until light brown.
