Country Vegetable Soup
Country Vegetable Soup is an moderately easy dinner. Made with 2 tbsp. olive oil, 1 c. spinach (frozen or fresh), 1 c. chopped carrots, 1 c. green beans (frozen or fresh) and 2/3 c. chopped celery, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
In a large saucepan, heat oil. Cook vegetables, parsley and garlic 3 minutes or just until vegetables begin to cook. Add broth and bay leaves; heat to boiling. Reduce heat and simmer 20 to 30 minutes. Return broth to boiling.
Stir in uncooked noodles. Boil, stirring occasionally, 5 minutes or until noodles are tender. Remove bay leaves before serving.
