Cottage Cheese Squares(Varskeciai)
Cottage Cheese Squares(Varskeciai) is an easy dinner. Made with 2 c. flour, 2 lb. farmer cheese (cottage cheese drained thoroughly will substitute), 1/2 lb. melted butter, 6 eggs and 1 tsp. salt, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Mix together in a large mixing bowl all ingredients except the butter.
Form into a large ball and place in refrigerator overnight or leave in freezer for 1 hour.
Cut into 4 parts for ease of handling and roll into 4 balls.
Roll out dough into 4 long sections approximately 1/2 inch in diameter.
With your fingertips, flatten the rolls approximately 1/4 inch thick.
With a knife, cut into 1-inch squares.
Place into rapidly boiling water for 5 minutes.
Drain and place into serving bowl.
Pour melted butter over the top and serve hot.
