Corn Chowder
Corn Chowder is an moderately easy dinner. Made with 2 tbsp. margarine, 1/2 c. chopped onion, 2 tbsp. flour, 1 qt. milk and 1/2 c. thinly sliced celery, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
In medium saucepan, melt butter and saute onion (3 minutes). Stir in flour; cook and stir for 1 minute.
Blend in milk; cook, stirring constantly, until boiling and mixture thickens.
Stir in celery, sugar, salt, pepper and corn.
Cover and simmer over low heat for 10 minutes.
In small bowl, lightly beat eggs.
Stir 1 cup hot mixture into eggs.
Return to soup.
Heat but do not boil. Stir in chopped parsley.
Sprinkle with crumbled bacon.
Makes about 6 servings.
