Corn and Zucchini
Corn And Zucchini is an moderately easy dinner. Made with 1 lb. (3 or 4 medium) zucchini, 1 tbsp. butter, 1/2 c. chopped onion, 2 eggs, beaten and 1 can corn, drained, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Slice zucchini; cook, covered, in small amount of salt water until tender.
Drain and mash with fork.
Cook onion in butter. Combine eggs, zucchini, onion, corn, cheese, and salt.
Pour into casserole.
Mix butter, bread crumbs, and cheese (Parmesan). Sprinkle on top.
Place on baking sheet and bake at 300Β° until brown and bubbly.
Garnish with cherry tomatoes and parsley.
