Coq Au Vin
Coq Au Vin is an impressive dinner. Made with 2 chickens, cut into serving pieces, 3 tbsp. butter, 1/4 lb. bacon, crumbled, 1/2 c. onion, sliced and 1 clove garlic, minced, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Brown chicken in butter and bacon.
Add onion.
Drain off some fat.
Push aside in pan and add seasonings.
Add sherry and simmer 45 minutes.
Remove chicken.
Add mushrooms and flour (if you like thick gravy) and simmer for 10 minutes.
Pour gravy over chicken (and rice, too!).
Serves 6 to 8.
