Chow-Chow Relish
Chow-Chow Relish is an moderately easy dinner. Made with 1 1/2 c. chopped green tomatoes, 4 c. chopped cabbage, 2 c. chopped onions, 2 c. sweet red pepper, chopped and seeds removed and 1/2 c. pickling salt, this recipe delivers authentic, satisfying flavors. Mix vegetables together.
Dissolve salt in 8 cups of water and pour over vegetables.
Let stand in cool place overnight, then drain.
If too salty, rinse and drain again.
Tie spices in cheesecloth.
Add to vinegar and 1 cup water.
Let simmer 5 minutes.
Add sugar; stir until dissolved.
Add vegetables and simmer for 15 minutes.
Bring to a boil and pack boiling ingredients in hot jars and seal.
