Season chicken breast with salt, ginger and pepper; place in pan (9 x 11-inch) and set aside.
Combine the chicken stock, orange juice, honey and lemon juice and bring to boil, thicken slightly with 1 tablespoon cornstarch.
Spoon sauce over and under chicken.
Cover with foil.
Bake at 350° until tender, turning once (45 to 55 minutes).
Serve over rice pilaf. (Can freeze, defrost overnight in refrigerator and reheat, covered, at 325°.)
