Chicken-Wild Rice Casserole
Chicken-Wild Rice Casserole is an moderately easy dinner. Made with 2 to 3 lb. broiler chicken, 1 c. water, 1 c. dry sherry, 1 1/2 tsp. salt and 1/2 tsp. curry powder, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Place chicken in deep kettle.
Add water, sherry, salt, curry powder, onion and celery.
Cover and bring to a boil.
Reduce heat and simmer for 1 hour.
Remove from heat, strain broth (reserve). Cool chicken, debone and cut into bite-sized pieces.
Wash mushrooms, pat dry.
Slice and saute mushrooms in butter until brown.
