Chicken Ratatouille
Chicken Ratatouille is an moderately easy dinner. Made with 4 boneless cubed chicken breasts, 1/4 c. oil, 2 small zucchini, cubed, 1 small eggplant, cubed and 1 large onion, chopped, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

In large skillet, heat oil.
Cook chicken for 3 minutes, stirring frequently.
Add zucchini, eggplant, onion, green pepper, mushrooms and garlic.
Cook for an additional 2 minutes.
Add tomatoes, stirring carefully.
Add Italian seasoning, salt and pepper.
Simmer, uncovered, for 10 minutes.
This dish is done when chicken and vegetables are tender.
Serve with white rice and salad.
