Chicken Ratatouille
Chicken Ratatouille is an moderately easy dinner. Made with 1 onion, 1 green pepper, 2 small zucchini, 2 tomatoes and 2 cloves garlic, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Chop onion, pepper and tomato.
Slice zucchini; mince garlic. Cut chicken crosswise into strips.
Saute onion and green pepper in 1 tablespoon oil until soft; add garlic and zucchini and cook 3 or 4 minutes.
Add tomato and cook 3 minutes.
Push aside; add remaining oil and add chicken until it begins to brown.
Stir in herbs, salt and pepper and cook until chicken is done and liquid evaporates.
Add lemon to serve.
