Chicken Faribault Blue
Chicken Faribault Blue is an moderately easy dinner. Made with 4 whole boneless chicken breasts, halved, 1/4 c. butter, 1/2 c. all-purpose flour, 1 can beef consomme and 1/2 c. madeira wine or dry red wine, this recipe delivers authentic, satisfying flavors. Dredge chicken in flour; reserve remaining flour.
In skillet, brown chicken in butter over medium heat for about 15 minutes. Place on platter; keep warm.
Add reserved flour to skillet; brown slightly, stirring constantly, with wire whisk.
Add beef consomme, wine, butter and Blue cheese.
Bring to a boil, reduce heat and simmer 5 minutes.
Spoon sauce over chicken to serve. Garnish with slivered almonds.
