Chicken Breast Diane
Chicken Breast Diane is an moderately easy dinner. Made with 4 large boneless chicken breasts, juice of 1/2 lemon or lime, 1/2 tsp. salt, 1/2 tsp. pepper and 2 tbsp. oil, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Place chicken breasts between wax paper, pound slightly with mallet and sprinkle with salt and pepper.
Heat 1 tablespoon each oil and margarine in large skillet.
Cook chicken on high 4 minutes on each side.
Transfer to serving platter.
Add chives, lemon juice, parsley and mustard to pan.
Cook 30 seconds whisking constantly.
Whisk in broth.
Stir until sauce is smooth.
Whisk in remaining margarine and oil.
Pour sauce over chicken and serve immediately.
