Cauliflower Au Gratin
Cauliflower Au Gratin is an moderately easy dinner. Made with 1 head cauliflower (cut into florets), 1 tsp. salt, divided, 1/4 c. butter or margarine, melted, 24 saltines, crushed and 1 tbsp. sugar, this recipe delivers authentic, satisfying flavors. Cook cauliflower in boiling water to cover with 1/2 teaspoon salt for 5 minutes, drain.
In a large bowl, stir together 1/2 teaspoon salt, butter, crackers, sugar and pepper, mix well.
Stir in cauliflower, bell pepper, tomatoes, onion and 1 1/4 cups cheese.
Spoon into a lightly greased 2-quart baking dish.
Sprinkle with remaining cheese.
Bake at 350 degrees for 1 hour.
Serve immediately.
