Caramel Icing
Caramel Icing is an easy dinner. Made with 3 1/2 c. sugar, divided, 3 tbsp. boiling water, 1 c. whipping cream and 3 tbsp. butter, melted, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Caramelize 1/2 cup sugar by melting it in a heavy saucepan until it becomes a golden brown syrup.
Add boiling water slowly, stirring constantly.
In a second saucepan, stir together the remaining sugar, cream and butter.
Warm cream mixture over low heat.
Pour caramelized sugar into cream mixture and cook to the soft ball stage (240°).
Cool to 140°.
Beat to spreading consistency and spread on a cooled cake.
