Cantaloupe Pie(Serves 6)
Cantaloupe Pie(Serves 6) is an moderately easy dinner. Made with 1 ripe cantaloupe, 2 envelopes unflavored gelatin, 1/4 c. sugar, 1/2 c. orange juice and 1 (3 oz.) pkg. cream cheese, room temperature, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Cut cantaloupe in half; remove seeds and rind.
Cut a few thin slices of melon and reserve for garnish.
Cut remaining melon in chunks; purée in blender or processor.
(There should be 3 cups of purée.)
In a small saucepan, combine sugar and gelatin.
Stir in orange juice.
Let stand 1 minute.
Cook over medium heat, stirring constantly, until sugar and gelatin dissolve.
Stir in melon purée.
In blender, combine cream cheese and 1/2 cup melon purée.
Cover; blend until smooth.
Stir back into melon mixture in pan.
Pour into pie shell.
Chill until firm.
Garnish with melon slices and whipped cream.
