Cajun Red Beans and Rice
Cajun Red Beans And Rice is an moderately easy dinner. Made with 1 lb. dry red kidney beans, washed and sorted, 2 qt. cold water, 1 c. chopped onion, 3/4 c. chopped green pepper and 1 c. minced celery, this recipe delivers authentic, satisfying flavors. Place beans in a very large heavy kettle.
Add water; cover and soak overnight.
Next day, add onion, green pepper, celery, ham, salt, cayenne and black pepper to the beans in their soaking water.
Bring to a boil over high heat.
Lower heat so that liquid ripples gently.
Cover; simmer for 2 1/2 hours.
Stir in onion tops and parsley.
Turn heat to lowest point and cook, uncovered, for about 30 minutes.
Serve over beds of hot, fluffy rice.
