Cajun Cabbage
Cajun Cabbage is an moderately easy dinner. Made with 1 (2 lb.) cabbage head, 2 c. chopped onion, 2 large green pepper, chopped, 2 cans ro-tel tomatoes and chilies and 1/4 c. cider vinegar, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
In a large pot, heat oil; add cabbage and stir until cabbage is covered with oil.
Cook for 7 to 10 minutes, turning about 3 to 4 times.
Add onions, green pepper, tomatoes, water and vinegar. Mix. Simmer for 30 to 35 minutes, until almost tender.
Add smoked sausage and salt and pepper to taste.
Cook an additional 20 minutes or until done.
