Broiled Stuffed Mushrooms
Broiled Stuffed Mushrooms is an moderately easy dinner. Made with 12 large mushrooms, 3 tbsp. butter, 1 small onion, chopped, 1 c. fine soft bread crumbs and 1/2 c. chopped cooked chicken, ham or shrimp or 1/4 c. chopped unsalted nuts or cooked bacon, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Preheat broiler.
Remove and chop the mushroom stems.
In a skillet, heat one tablespoon of the butter, add the onions and chopped mushroom stems and cook about two minutes.
Add the crumbs, the meat, shrimp or nuts, enough cream or sherry to moisten the mixture and the seasonings.
Place the mushroom caps on a baking sheet and brush with the remaining butter, melted.
Broil, cup side down, in a preheated broiler about two minutes.
Invert and fill with the stuffing.
Brush with melted butter and broil about three minutes longer.
