Broccoli Cheese Soup
Broccoli Cheese Soup is an moderately easy dinner. Made with 1 lb. fresh or 2 boxes frozen broccoli, 2 sticks margarine, 1 qt. chicken stock (may use 4 cubes in 4 c. water), 1 qt. half and half and 1/2 to 3/4 lb. cheddar cheese, this recipe delivers authentic, satisfying flavors. Clean broccoli, remove stems and cut into 1/2-inch pieces. Steam in 1/2 cup water until tender; do not drain.
Set aside.
If using frozen broccoli, not necessary to thaw.
Melt butter in saucepan over medium heat.
Add flour; cook for 3 to 4 minutes. Add chicken stock; stir and bring to a boil.
Turn heat to low. Add half and half, cheese and broccoli.
Heat until cheese melts. Do not boil.
