Blanch flowerets and stems 2 minutes and drain.

Mix broccoli, cheese, sour cream, mayonnaise, beaten egg yolks, butter, salt, pepper and nutmeg thoroughly.

Fold in beaten whites.

Pour in lightly greased 1 1/2-quart casserole.

Sprinkle with seeds if desired.

Bake 45 to 50 minutes until set at 350°.

Cooks like a soufflé but does not fall; remains like a quiche filling.

Freezes very well.
