Bread and Butter Pickles
Bread And Butter Pickles is an moderately easy dinner. Made with 7 lb. cucumbers, sliced thinly, 2 c. pickling lime, 12 medium onions, sliced and ringed, 5 large bell peppers, sliced (if desired) and 2 qt. white distilled vinegar, this recipe delivers authentic, satisfying flavors. Mix pickling lime in 2 gallons of water; pour over cukes and soak 24 hours.
Rinse thoroughly.
Cover cukes, onions and pepper with ice water; let stand 3 hours.
Drain well.
Cover with vinegar, sugar, salt, celery seed, turmeric and mustard seed.
Let stand overnight.
Bring to a boil and let boil for 20 minutes. Pack in jars and seal.
Yields about 10 pints.
