Beets in Citrus Sauce
Beets In Citrus Sauce is an moderately easy dinner. Made with 1 1/2 to 2 lb. young beets, 1 1/4 c. liquid (from beets), 1 lemon, 1 tbsp. orange peel, freshly grated and 2 1/2 tbsp. sugar, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Cook beets whole until tender.
Drain, reserving liquid, peel and slice thin.
Pour liquid into pot.
Add grated peel, juice of 1 lemon, sugar, salt, cloves and orange juice concentrate. Dissolve cornstarch in just enough water to make smooth paste and add to mixture.
Beat mixture with whisk and cook until it becomes clear.
Add sliced beets and butter; heat.
Serve hot.
