Beef Barley Soup
Beef Barley Soup is an moderately easy dinner. Made with 1/2 c. minced onion, 5 tbsp. butter, 1 c. medium pearl barley, 3 cans boiling beef consomme and 1/2 lb. mushrooms, sliced, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

Saute onion in 3 tablespoons butter until soft but not brown. Stir in barley; cook over medium heat for 3 to 5 minutes, or until barley begins to brown.
Stir constantly.
Add hot consomme very slowly; barley will sizzle.
Cook over lowest heat until barley has absorbed liquid (45 minutes to 1 hour).
Saute mushrooms.
Put in barley and season.
Cook a few minutes together.
