Beef and Barley Soup
Beef And Barley Soup is an moderately easy dinner. Made with 1 tbsp. cooking oil, 2 lb. beef stew meat, 2 medium onions, coarsely chopped, 3 large carrots, sliced and 3 celery stalks, sliced, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
In a large Dutch oven or kettle, heat oil over medium heat. Brown beef.
Add onion, carrots, celery, tomatoes, water and bouillon; bring to a boil.
Cover and simmer for about 2 hours or until beef is tender.
Add barley; simmer another 50 to 60 minutes or until the barley is done.
