Preheat oven to 350Β°.

Season all sides of roast very well with Cajun seasoning, garlic salt, salt and pepper.

Put roast in open pan (fat side up so that it will melt down over roast) with 1/2-inch of water added to pan.

Allow 30 minutes cooking time for each pound of meat.

Cook 1 hour, then cover with foil and cook for remainder of allotted time.

(Keep water level consistent in pan, adding water as needed.)

After roast is covered with foil and has "roasted" 2 1/2 to 3 hours, check the level of water again and continue to cook one more hour.

Remove from oven and let rest for 10 minutes before carving.
