Baked Potato Soup
Baked Potato Soup is an moderately easy dinner. Made with 4 large baking potatoes, 6 cups milk, 2/3 cups margarine, 2/3 cup plain flour and 12 slices cooked bacon, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Bake potatoes, cool, dice, set aside.
Fry, drain well and chop bacon, set aside. Chop onions including tops, set aside. Melt margarine on low heat in large sauce pan.
Add flour stirring constantly for one minute.
Gradually add milk and cook until thick and bubbly.
Add diced potatoes, salt, pepper, 2 Tbsp chopped onion, 1/2 cup bacon, and 1 cup of cheese.
