Baked Mushrooms
Baked Mushrooms is an moderately easy dinner. Made with 1/3 c. olive oil, 2 tbsp. wine vinegar, 1 medium onion, grated, 1/2 to 1 clove garlic, minced and 2 tbsp. chopped fresh parsley, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Combine oil, vinegar, onion, garlic, herbs, salt and pepper. Add mushrooms and, basting frequently, marinate for 3 hours.
Drain and saute in butter over high heat for 1 minute.
Reduce heat to low; cook for 10 minutes, stirring frequently.
Transfer to a buttered baking dish; sprinkle bread crumbs and cheese over mushrooms.
Broil until top is browned.
Serve as a first course or vegetable accompaniment to meat or fowl.
