Aunt Vera's Peanut Brittle
Aunt Vera'S Peanut Brittle is an moderately easy dinner. Made with 1 lb. raw peanuts (2 c.), 1 c. light karo, 1 c. sugar, 1 tbsp. butter and pinch of salt (1/3 tsp.), this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Combine nuts, Karo, sugar, butter and salt in heavy skillet. Cook on high heat, being careful not to burn it.
Stir until dissolved, 15 or 20 minutes, until mixture spins a thread.
Remove from heat and immediately stir in soda and vanilla.
Cool on cookie sheet and break into pieces when cool.
Can be used with 1 cup peanuts and 1 cup pecans or with 2 cups pecans.
