Artichoke Relish
Artichoke Relish is an moderately easy dinner. Made with 2 lb. jerusalem artichokes, 1 c. salt, 1 gal. water, 1 pt. ground sweet green or red peppers and 1 pt. ground onions, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

Wash artichokes and trim as needed.
Soak overnight in brine of 1 cup salt to 1 gallon water.
Next morning, drain well.
Using coarse blade, grind artichokes, onions and pepper.
Mix in mustard seed, 1/4 teaspoon salt and turmeric.
Dissolve sugar in vinegar and bring to boil.
Combine mixtures.
Bring to rolling boil. Pack hot into 1/2 pint jars, leaving 1/2-inch headspace.
Remove air bubbles; wipe jar rims.
Adjust lids and process 10 minutes in boiling water bath.
