Artichoke Nibbles
Artichoke Nibbles is an moderately easy dinner. Made with 2 (6 oz.) jars marinated artichoke hearts, 1 medium onion, chopped fine, 4 eggs, 1 garlic clove, mashed and 1/4 c. bread crumbs (fine), this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Drain marinade; reserve.
Chop artichokes and set aside. Saute onion and garlic in small amount of marinade. Beat eggs with fork and add crumbs and seasonings.
Stir in parsley, artichokes and onion-garlic mixture. Turn into buttered 7 1/2 x 11 1/2-inch Pyrex bake pan (2-quart).
Bake at 325Β° for 30 minutes or until set when lightly touched.
Let cool in pan, then cut in 1-inch squares.
