Apricot Loaf
Apricot Loaf is an moderately easy dinner. Made with 1 c. dried apricots, 2 c. flour, 2 tsp. baking powder, 1 tsp. salt and 1/4 tsp. baking soda, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Soak dried apricots in warm water for 15 minutes.
Drain water and cut apricots into pieces.
Set aside.
Cream in shortening and sugar together.
Add eggs; blend well.
Add sifted flour, baking powder, baking soda and salt alternately with water and orange juice.
Fold in apricots and nuts.
Pour batter in greased 9 x 5 x 3-inch loaf pan.
Push batter into corners of pan, leaving center slightly hollow.
Let stand for 20 minutes before baking.
Bake at 375Β° for 60 to 65 minutes.
