Apricot-Date-Prune Pie
Apricot-Date-Prune Pie is an moderately easy dinner. Made with 1 c. packed dried apricots, halved, 1 c. packed pitted prunes, halved, 1 c. packed pitted dates, halved, pastry for 2 crust pie and 1 1/2 c. water, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Put apricots, dates, prunes, water and salt in saucepan. Bring to a boil over medium heat. Cover and simmer until fruit is tender and water is absorbed, about 10 minutes, stirring occasionally. Stir in juice and vanilla. Chill.
Roll out half of pastry and line pie plate. Fill with fruit mixture.
Roll out remaining pastry and cut into 3/4-inch strips. Arrange lattice fashion on pie.
Brush pastry with milk or egg.
Bake on bottom rack in preheated 425Β° oven for 30 minutes or until golden brown. Cool. Serve slightly warm or cool topped with whipped cream, if desired.
